Fat Head Pizza Recipe
If you search for 'fat head pizza' on Google, you will find hundreds of recipes. I've tailored mine over the last year to what works best in my oven, and portion wise.
Ingredients
- 8 ounces of pizza cheese (mozzarella is fine)
- 2 ounces of cream cheese
- 1 egg
- 3/4th cup or almond flour
- five pepper salsa
- spices of your preference
- Microwave 6 ounces of pizza and cream cheese for 45-60 seconds then mix together until blended well.
- Add egg, flour, and spices to cheeses and thoroughly blend.
- Roll dough and spread onto parchment paper about at one quarter inch thickness.
- Poke holes in dough all over using a fork. This prevents dough from bubbling.
- Back on parchment paper in a pan for 10-12 minutes at 425 degrees.
- Remove from oven, add salsa, remaining two ounces of pizza cheese, and any toppings you want, then bake for another 3-5 minutes
Low Carb ‘Fried’ Chicken
This is a delicious low carb alternative to fried chicken and is my own recipe.
Ingredients
- 4 pack of chicken thighs
- Hot sauce of your choice as long as very low carb
- About half a bag of pork rinds
- Spices of your choice
- Put thighs in a bowl and cover in hot sauce. Let them soak for a half hour or so.
- Crush pork rinds into a powder then mix with spices.
- Roll thighs in pork rinds and spices
- Bake at 430 degrees for 30-32 minutes in a pan coated in olive oil
